How to Make Perfect Chilaquiles Dish

Serve this Mexican favorite with a tart mimosa and a side of beans and potatoes. Here is the Recipe Salsa Verde

2 ½ lb. fresh tomatillos, papery husks removed ½ yellow onion, peeled 2 jalapeño chiles, stemmed ½ cup cilantro leaves

Guacamole

2 avocados, halved, pitted, and flesh scooped out 1 Tbs. chopped cilantro ⅛ tsp. olive oil 1 ½ tsp. lemon juice 1 small tomato, finely diced ¼ red onion, finely diced

Pico de Gallo

5 medium tomatoes, finely diced ½ small onion, finely diced ¼ cup chopped cilantro 2 Tbs. lime juice

Chilaquiles

2 Tbs. olive oil 2 16-oz. pkg. extra-firm tofu, drained and crumbled 6 cups tortilla chips

Tomato- Basil Pasta- A Mouthwatering & Tasty Dish

Ingredients

4 medium tomatoes, diced (4 cups) 2 tsp. dried basil 2 tsp. chopped garlic 1 tsp. salt (optional) 1/4 tsp. ground black pepper 6 oz. your favorite shape pasta grated Parmesan cheese (optional)

Directions

Mix the first five ingredients and let sit at room temperature at least one hour.

Cook pasta according to package directions and drain. Top pasta with tomato mixture. Serve immediately and top with Parmesan cheese if desired. Makes 6 cups (four 1 1/2 cup servings).

Chocolate dosa – A perfect delight to your kids

Cooking time: 15 min.

Preparation time: 5 min.

Servings : 2  person

Ingredient Name Quantity Unit Milk  1 Cup Chocolate  1/4 Cup Butter  1/2 Teaspoons All purpose flour  1 Cup Baking powder  1/2 Teaspoons

Watermelon Agua Fresca – A Refreshing and Healthy Drink

Ingredients:

2 cups of cubed seeded watermelon

1/4 cup of water

Stevia to taste (make sure to go light to start on the stevia as it is more concentrated)

2 slices of lime

12 fresh mint leaves

Ice

How to Make:

Puree the watermelon and water in a blender until smooth. Add stevia to taste. Cut the lime slices in half. Place a half lime slice into each of 8 glasses along with 3 mint leaves. Crush with a cocktail muddler, then fill each glass with ice. Pour in the watermelon agua fresca, and stir before serving. Makes 2 servings. 75 calories each.
