240 ml water
120 ml honey
150 grams of dates, pitted and chopped
1 teaspoon bicarbonate of soda
2 oranges, zest and juice
3 Granny Smith apples, peeled, cored and grated
160g seedless white grapes, chopped
1 teaspoon cinnamon powder
60 grams of chopped walnuts
300g self-raising flour
Preheat oven to 175 degrees. Grease 18 muffin tins or line a muffin tin with paper cases.
Mix the water, honey, dates and baking soda in a saucepan and bring to a boil. Reduce heat and simmer until the dates are soft, about 2 minutes.Remove from heat and let cool. When the mixture has cooled you do it in a mixing bowl and add the zest and juice of the oranges, grated apples, grapes, walnuts and cinnamon, mix everything well. Mix the flour and spoon the batter into the greased tins.
Bake until the muffins are firm and top is golden brown, 25 to 30 minutes.
Sprinkle the muffins with the best decorations you have to make it more fun.
If you want the muffin sweeter it is nice to get some honey over it to throw it.
